Creamy Chicken and Rice Casserole

1 whole cooked chicken deboned diced
3 cups chicken broth
I large onion diced small
1 medium green bell pepper
6 large white mushrooms diced small
3 large cloves garlic minced
1 and 1/2 cups uncooked white rice
1 stick of butter
3 different cans of Creamy soups: cream of mushroom, cream of celery, cream of chicken
Seasonings: 1 tbsp garlic powder, 1 tbsp cilantro (dried or fresh)
Handful of fresh chopped parsley
1 large cube of chicken bouillon (knorr brand)
Salt and pepper to taste
To prepare:
I used my microwave to cook the rice but (you can do it on the stovetop if you prefer)
First use a large bowl that fits in the microwave. Add the 3 cups of chicken broth. Add all diced vegetables and seasonings, then the chicken bouillon. Add the uncooked rice. I microwaved all this about 25 minutes but your microwave may vary. Microwave mixture half way then stop and give it a stir. Continue to microwave until rice is tender. Take out and stir to make sure everything is mixed up well. Add your stick of butter, stir it again. Add your 3 cans of soup. Mix well then add chicken. Mix until we’ll blended. At this point you could add some cheddar cheese if you want to give it more flavor but I didn’t here. Pour mixture into a 9×13” casserole dish that has been sprayed with a non-stick cooking spray. Smooth top of mixture making sure it’s level. At this point I bought some of the new Pillsbury pull-apart garlic rolls and put on top of casserole distributed evenly. Then melted garlic butter drizzled over the top. You can add cheese, buttered bread crumbs, or whatever you like I just had these garlic rolls that I needed to use. Bake on 350 degrees for about 25 minutes. Check it after cooking if the garlic rolls aren’t browned to your liking add a couple of more minutes. Enjoy!
(This recipe is very versatile, instead of chicken use ham or even ground beef. You could even substitute your own veggies like add broccoli or peas.)
